Observed multiple sanitizer buckets storing wiping cloths with a sanitization concentration of 500 ppm quat. Advised PIC cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). COS: PIC diluted the sanitization concentration of sanitizer buckets storing wiping cloths to 200 ppm quat
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed RIC #2 in the main kitchen with an ambient temperature of 61.8 degrees F. Advised PIC that Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. Advised PIC to have unit service or replaced.
