11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed 2 containers of cut lettuce (prepped today) cooling tightly covered in the walk-in cooler in the main kitchen. Advised PIC on proper cooling methods: under refrigeration uncovered or loosely covered. COS: PIC removed covers from the containers of cut lettuce.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed the warmer box in disrepair, and not in use. Advised PIC equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2) of this Rule. Advised PIC to have unit repaired or to replace unit.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(d),(e) - warewashing equipment, cleaning frequency; warewashing machines, manufacturers' operating instructions (c)
Observed the mechanical dish machine not in use due to being in disrepair. Advised PIC A warewashing machine and its auxiliary components shall be operated in accordance with the machine's data plate and other manufacturer's instructions. Advised PIC to have unit serviced or to replace unit.
