Observed food contact surfaces of multiple knives stored on magnetic knife holder in the main kitchen as clean with encrusted food debris. Advised IC that food contact surfaces shall be cleaned to sight and touch. Advised PIC o wash, rinse, and sanitize multiple knives.
11A - proper cooling methods used: adequate equipment for temperature control

Observed a container of raw chicken wings cooling tightly covered in the RIC> Advised PIC on cooling methods: under refrigeration; uncovered or loosely covered. COS: Had PIC loosely cover container of raw chicken wings in the RIC.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed visible light entry at the screen door with the back door open. Advised PIC that outer openings shall be protected against pests and rodents by solid, self-closing, tight-fitting doors. Advised PIC to repair screen door. COS: PIC closed the main back door.
