Observed TCS food items held near front of walk in cooler (cooked beans, deli turkey, cooked potato) and reach in cooler at front service (cut lettuce) measuring above 41 degrees F. CA: Advised PIC to have temp turned down on units or fixed within 48 hours. All TCS food items shall measure 41 degrees F or below for cold holding.

Observed TCS food items (beef and pasta) hot holding in reach in warmer in main kitchen directly in front of stove in main kitchen measuring below 135 degrees F. According to PIC, gaskets on unit are not working properly. PIC said she would take out of service until fixed. PIC moved TCS food items to oven to reheat. CA: All TCS food items shall measure 135 degrees F or above for hot holding.

Observed employee personal belongings (purse, plastic water bottle, and cell phone) stored next to soda syrup and jellies and above other condiments. COS: PIC moved employee personal items to a designated area.
