Observed mashed potatoes, pork, and marinara cold holding above 41 in reach in cooler in main kitchen (see asterisked food items on temp log).
C/A: Time/temperature control for safety food shall be maintained at 41°F (5°C) or below
COS: PIC discarded food at time of inspection.
4-2A - food stored covered

Observed two pans of cake stored uncovered and two trays of salad stored uncovered in reach in cooler. C/A: Unless cooling food must be stored cover to prevent contamination. COS: PIC covered all food at time of inspection.
