Regulation: 511-6-1.03(6) - clean-up of vomiting and diarrheal events(pf)
Observed no bodily fluid clean up kit in facility. CA: A bodily fluid clean up kit is required in all food service establishments in the event of a bodily fluid spill.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed no approved sanitizer for ware washing in three compartment sink or sanitizing food contact surfaces available in the facility. Facility is currently using laundry bleach as sanitizer. CA: Facilities must have approved sanitizer for food contact surfaces at all times to ensure proper sanitization of equipment and utensils.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed one open jug of milk in FFS RIC and storage area RIC with no date marking for opening or expiration. CA: All TCS foods must be date marked with prep/open date or date of expiration. COS: PIC discarded two jugs of milk.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed open gallon of milk in FFS RIC, not protected from cross contamination in self serve area. CA: All food must be protected from sources of contamination. COS: PIC removed jug of milk from FFS area. Facility must switch to single service cartons of milk or a dispenser that is able to maintain proper cold holding temp.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(p) - warewashing equipment, determining chemical sanitizer concentration (pf)
Observed no ability to verify chemical concentrations (no test strips) for sanitizer solutions. CA: Facilities must have test strips to verify correct sanitizing levels of chemical sanitizing solutions.
