Observed uncovered gyros stored in the deep freezer by prep top cooler in front food service. Observed container of potatoes and sliced cucumbers uncovered in the walk-in cooler of main kitchen. Observed containers of crackers and croutons uncovered by buffet line near soda machine in lobby. C/A: (iv) Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2. (ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. COS: All food items covered.

PIC unable to provide chlorine testing strips to test sanitizer buckets in front food service. CA: (i) Sanitizing Solutions, Testing Devices. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Chlorine shall test 50 ppm.

Observed buildup on the hood above the grill in front food service. C/A: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
