C/A: Food employees shall clean their hands in a handwashing sink and may not clean their hands in a sink used for food preparation. COS: PIC educated employee on washing hands only at a designated hand washing sink.

Observed bottle of olive oil and containers of salt and pepper removed from original packaging lack identification. C/A: Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food. Correct within 72 hours.
