Observed TCS foods cold holding above 41F (ham and tomatoes in prep top cooler of main kitchen).
CA: TCS foods cold holding shall be maintained at 41F or below.
COS: Items discarded.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed grease build up on walls near hood in Main Kitchen and vents with buildup. CA: Physical facilities shall be maintained clean
