6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed containers of white rice, curry sauce, and raw chicken fat stored above 41F inside the reach cooler in the main kitchen. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS The food items were discarded.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Containers of curry sauce, coconut sauce, and pork was stored uncovered inside the reach in cooler. CA: Storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. COS: The food items were covered.
10D - food properly labeled; original container
Regulation: 511-6-1.04(8)(b) - expired foods (p)
Observed whipped cream with an expiration date of 4/5/26 stored inside the reach in cooler. CA: Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. COS: The whipped cream was discarded.
10D - food properly labeled; original container
Regulation: 511-6-1.04(7)(c) - food labels (pf, c)
Observed sauce and seasoning containers without labels on prep table in main kitchen area. CA: Food packaged in a food service establishment, that is not provided by a foodservice employee upon consumer request, shall be labeled. Label information shall include the common name of the food, or if there is no common name, an adequately descriptive identity statement.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Grease accumulation and food debris was observed on the fryer, on the side of the stove, inside the microwave, on the outside surface of several food containers, inside the reach in coolers and refrigerators stored inside the kitchen and bar. CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed grease accumulation on floors under stove top area and walls behind stove top area in main kitchen. Observed accumulation of grease on vent hoods above stove top area in main kitchen. Mold was observed on the wall above the 3-compartment sink. CA: All physical facilities shall be maintained in good repair. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
