Observed several food items ( peanut sauce, sticky rice sauce, trin sauces, and hot sauce) removed from original container stored in 2-door RIC in main kitchen not labeled with common name.
C/A: Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.
COS: All food labeld with common name.
12B - personal cleanliness

Observed employee preparing food in main kitchen wearing watch on wrist.
C/A: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food.

Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
- Observed employee Starbuck's beverages stored on prep tables in main kitchen.
- Observed employee foods comingled and in contact with service food in small 2-door cooler and lower compartment of prep top cooler in main kitchen.
C/A: Lockers or other suitable facilities shall be located in a designated room or area where contamination of food of food for customers cannot occur by designating space or by the use of adequate separation.
