Observed several TCS foods cold holding above 41F in 3-door reach in cooler of main kitchen.
CA: TCS foods cold holding shall be maintained at 41F or below.
COS: Foods discarded.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Observed 3-door reach in cooler in disrepair and maintaining an ambient temperature above 41F.
CA: Cold holding units shall be kept in good repair and maintain refrigeration.
