6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
TCS food items stored inside the prep unit held cold holding temperatures above 41F. The ambient air temperature of the unit read 45F. CA TCS foods shall be maintained at 41F or below when cold holding. COS TCS food items stored for 1-hour was stored in ice and discarded.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(c) - microwave ovens (c)
Heavy food debris was observed inside the microwave. CA Equipment must be cleaned and sanitized.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Food debris was observed on the outside surface and base of the blender stored on the rack inside the kitchen. CA Equipment must be cleaned and sanitized.
