6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several cold holding violations inside the walk-in cooler and reach-in cooler (across from stove) in main kitchen.
C/A: Cold holding TCS foods shall be maintained at 41F or below at all times.
COS: Foods cooled to 41F by 1:10pm by placing the foods in the colder part in the fridge
