Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed beef, pork and queso cheese hot holding in steam table below 135F in main kitchen. Steam table heater under the three items were turned off.
CA: All three items were reheated to 165F. Steam table was turned on.
