6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed ham cold holding above 41F in prep top cooler in front food service area. Observed fruit cocktail with milk and strawberry with cream cold holding above 41F in display case 3 in front food service area.
CA: All TCS items shall be kept at 42F or below when cold holding.
COS: All items were tossed. PIC checked additional fruit cocktails and strawberries with cream and tossed any that were over 41F.
