Observed a container of raw beef and box of raw shrimp stored on top of kegs in the walk-in cooler in the main kitchen. C/A: Food shall be stored in order of cook temperature and through separation in order to prevent the possibility of cross contamination. COS: Containers and box were remoced and placed on shelves.

Observed dish machine dispensing 0 ppm chlorine with dishes inside. C/A: Dish machines using chlorine shall me maintained between 50-100 ppm. COS: PIC replaced sanitizer and primed machine.

Observed 5 containers of refried beans, and 10 containers of queso stored in the walk-in cooler with no date marking. Obserevd 3 containers of diced tomatoes and 2 pans of queso stored in the cooler with no date marking. C/A: TCS foods stored longer than 24 hours must be date marked. COS: Items date marked with discard dates.
