6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple items cold holding above 41F in prep top cooler in main kitchen (see asterisk).
CA: When cold holding, all TCS foods items shall be maintained at 41F or below.
COS: All TCS items in the prep top cooler were discarded. Ambient temp of prep top cooler 43F. Prep top cooler shall not be used for TCS food items until it is serviced and reaching 41F or below.
