Observed wiping cloths stored in sanitizer bucket on food prep line in main kitchen holding at 0ppm QAC C/A- When not in use wiping cloths shall be Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n) COS sanitizer bucket remade to 200ppm QAC
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed heavy food debris inside prep bottom unit, RIC, WIF, and main kitchen floor. C/A-Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
