Observed, in front food service prep top cooler (both), cutting board attached to prep top cooler with a lot of scratches and indentions in board that could possibly not be able to clean and sanitize effectively. C/A: Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they cannot be resurfaced.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(p) - warewashing equipment, determining chemical sanitizer concentration (pf)
Observed, in front food service, dish machine not dispensing chlorine sanitizer at the correct concentration when asked to run equipment to check. C/A: Mechanical warewashing equipment shall dispense a chemical sanitizer between 50-100 ppm (Chlorine) COS: Ecolab was onsite to make adjustments.
