6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several cold holding violations in reach-in cooler (1) of main kitchen. C/A: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC moved items to walk-in cooler. Per PIC, the items were placed in the unit at 7am for cold hold.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed reach-in cooler (1) of main kitchen is unable to maintain TCS foods 41F or below (ambient reading of 43F). C/A: Ensure cold holding equipment is kept in good repair. COS: Facility discontinued using the unit until further notice.
