Observed, in grill prep area prep top cooler bottom, multiple food items stored uncovered (curry, masala, chutney). Observed, in main kitchen prep top cooler bottom, multiple food items stored uncovered (tomato sauce, masala, curry). C/A: Except for loosely covered while cooling, food shall be kept covered with a lid or plastic wrap. COS: PIC placed plastic wrap on all uncovered food items.
4-2B - food-contact surfaces: cleaned & sanitized

Observed, in main kitchen, ice machine with a buildup of black debris (mold) on the ice shield and interior portions of the top of the ice machine. C/A: Food-contact surfaces shall be clean to sight and touch.
10D - food properly labeled; original container
Observed unidentifiable white substances stored in containers (4) in the grill prep area and main kitchen on the shelf. Observed several clear liquids stored in milk cartons that are unidentifiable. Observed 2 bottle of yellowish liquid stored in grill prep area that the employee said it was oil. C/A: Except for containers holding food that can be readily Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.
12A - contamination prevented during food preparation, storage, display

Observed, upon entering main kitchen, peeled potatoes in buckets (2) and yellow curry sauce in a bucket, stored on the ground. C/A: ALL FOOD SHALL BE STORED AT LEAST 6" OFF THE FLOOR, IN A CLEAN & DRY LOCATION WHERE IT IS NOT EXPOSED TO POSSIBLE CONTAMINATION. COS: PIC placed buckets of food on shelf.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed multiple wet wiping cloths stored throughout kitchen not in a sanitizing solution between use. C/A: Cloths used for wiping food and nonfood-contact surfaces shall be stored in between use in a sanitizer solution of 50-100 ppm (Cl).
