Observed several seasonings (cajun, etc.), wing sauces, and liquid margarine stored in shakers/squeeze bottles/containers at grill and on stove without common name in main kitchen.
C/A: Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.
COS: All food labeled.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(p) - warewashing equipment, determining chemical sanitizer concentration (pf)
Observed expired test strips at 3-compartment sink in main kitchen used to verify QAC and chlorine sanitizer concentrations.
C/A: Concentration of the sanitizing solution shall be accurately determined by using a test kit or other device.
