- Observed meat slicer stored for use on prep table in main kitchen with visible food debris and residue along blade and surfaces.
- Observed tomato slicer with food debris between blades stored for use under prep table in main kitchen.
C/A: Equipment food-contact surfaces and utensils shall be clean to sight and touch.
COS: Both equipment cleaned and sanitized.
10D - food properly labeled; original container
Regulation: 511-6-1.04(8)(b) - expired foods (p)
Observed 12-Shamrock 1% chocolate milks (7fl oz) date marked by the manufacture with best by date of 1/15/2026 in self serve cooler in lobby.
C/A: Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date.
COS: Milk discarded.

Observed heavy food accumulation and dirt along floors inside WIC and WIF in main kitchen. 2. Observed interior of roller cabinet soiled with residue and dirt stored in WIC in main kitchen.
C/A: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
- Observed accumulated food splatter along wall above prep table in main kitchen.
- Observed accumulated black substance and dirt under 3-compartment sink in main kitchen.
C/A: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.

Observed several missing, damaged baseboards along left side of wall under 3-compartment sink in main kitchen.
C/A: Repair area; All physical facilities shall be maintained in good repair.
