6-1A - proper cold holding temperatures
Observed Cold TCS foods (chicken wings,sesame chicken and garlic in oil) that holding above 41F prep top cooler and on the counter in the main kitchen CA: Hold cold TCS foods at 41f or below. COS Items were discarded
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed three stacks of of trays that were wet stacked at the three compartment sink C/A Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:

Shall be air-dried or used after adequate draining before contact with food; and

May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
COS PIC unstacked the trays to let then dry out
