Observed the handwashing sink in the front service area without any paper towels. C/A Hand Drying Provision. Each handwashing sink or group of adjacent handwashing sinks shall be provided with:

A heated-air hand drying device; Pf or

A hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures.Pf COS Manager placed a roll of paper towels at the sink

Observed the hand sink in the front service area with a plastic cup inside it. Observed the hand sink from the rear with a plastic tray over it and a empty olive oil bottle on top of it. C/A Using a Handwashing Sink.

A handwashing facility may not be used for purposes other than handwashing. Pf COS: Manager removed all the items from the sink
10D - food properly labeled; original container
Regulation: 511-6-1.04(7)(c) - food labels (pf, c)
Observed the condiment bottles at the prep counter without a label identifying what condiment is inside the bottle. Observed several bottles stored at the bottom of the cooler without a proper identification on it. COS: Manager had to re-label the the bottles
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping cloths being stored in 0ppm chlorine at the three compartment sink. C/A Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and
(ii) Laundered daily.
- Cloths in-use for wiping surfaces in contact with raw animal foods shall be kept separate from cloths used for other purposes. COS: Manager replaced the sanitizer water
