4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(l) - mechanical warewashing, hot water sanitization temperatures(p)
Observed staff using the dishwasher without the dishwasher reaching the final rinse sanitizing temperature of 180*F. Sticker remained black after testing the dishwasher. C/A Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures.
- Except as specified in paragraph 2 of this subsection, in a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 194ºF (90ºC), or less than: Pf
(i) For a stationary rack, single temperature machine, 165ºF (74ºC); Pf or
(ii) For all other machines, 180ºF (82ºC). Pf COS Manager was instructed to direct staff to wash dishes at the four compartment sink until the dishwasher is repaired. Manager will need to submit a repair invoice to EHS within 72 hours stating the dishwasher has been repaired Update: The manager submitted a picture with the sticker turned orange, the dishwasher needed to have the booster heater reset.

Observed the ice bin located in the service area with mold build-up on the edge of the chute. C/A Cleaning of Equipment and Utensils.

- Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. COS Manager cleaned the ice bin before EHS left the premises
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(g) - chemical sanitizers, criteria (p)
Observed the sanitizing buckets in the front service area and the main kitchen with a concentration above 200ppm C/A Chemical Sanitizers, Criteria. Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall:
- Meet requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations. Chlorine concentration needs to be between 50-100ppm COS: PIC diluted sanitizer to 50 ppm. Facility is using chlorine as sanitizer
