Boxes of cooking oil was observed stored directly on the floor inside the kitchen near the prep line and inside the dry storage room outside. CA Food items and beverages must be stored 6 inches off the floor to prevent contamination. Standing water was observed inside the bottom area of prep unit #2 where the raw chicken was held. CA Remove standing water to prevent contamination of food items.

Several dirty damp and dry wiping cloths were stored on the countertops throughout the kitchen. CA Damp cloths must be stored inside the sanitizer bucket when not in use. Dry wiping cloths must be changed out when needed if dirty to prevent contamination. COS The wiping cloths were removed and/or stored inside the sanitizer buckets.

Food debris and grease accumulation was observed on the stainless steel panel behind the grill, on the hood and underneath the grill. CA Clean and sanitize surfaces to prevent contamination.
