6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed, in front food service, lettuce and sliced american cheese on top portion of prep top cooler cold holding above 41°F. Observed in bottom portion of prep top cooler, multiple deli meats, cream cheese, and cheese cold holding above 41°F. Ambient temperature measured between 45°F - 52°F. C/A: TCS food that is cold holding must be at or below 41°F at all times. COS: PIC moved deli meat, cheeses, lettuce, and cream cheese to reach in cooler.
