Observed turkey, pepperoni, roast beef, and salami tempting above 41 degrees Fahrenheit in prep top cooler. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. PIC discarded turkey, pepperoni, roast beef, and salami tempting above 41 degrees Fahrenheit and put out turkey, pepperoni, roast beef, and salami that are tempting 41 degrees Fahrenheit and below.
