Observed dishes on the clean dish rack that were still dirty. C/A: Ensure dishes are cleaned thoroughly before placing with clean dishes.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed TCS in bottom section of PTC without dates. C/A: TCS food must be dated with prep and discard dates.
