Observed cooked chicken wings stored on countertop at 81F. TCS food item stored for hot holding should be stored at 135F or above. PIC discarded food item during inspection.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed handle of scoop touching in a container of rice in the reach-in cooler and container of salt on storage rack. PIC removed scoops during inspection.
