Observed dirty utensils stored in container with clean utensils. Equipment food-contact surfaces and utensils should be clean to sight and touch. PIC removed utensils, cleaned and sanitized items during inspection.
12A - contamination prevented during food preparation, storage, display

Observed uncovered shredded mozzarella cheese in individual containers stacked on top of each other. PIC unstacked food items and discard food items directly in contact with bottom of containers during inspection.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping clothes stored in sanitizer bucket not reaching minimum chemical concentrations. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and laundered daily. PIC remade sanitizer bucket during inspection.

Observed single use items stored upward with food contact surface exposed with no overhead protection. Single-use items should be stored covered or inverted to protect from overhead contamination. PIC inverted items during inspection.
