Observed Staff Double stacking racks of cups in dishmachine. The way the racks were stacked on top of each other prevented the dishmachine spray from the bottom spray arm from adequately washing, rinsing and sanitizing the top rack of cups. All food contact surfaces need to washed, rinsed and sanitized so that they are clean to both sight and touch. Staff member was immediately instructed on the proper method of loading racks into the dishmachine.

Observed hamburger style pickle chips on the floor of the walk-in-cooler. Some of the pickle chips had been stepped on and were smeared into the floor. There was also a puddle of liquid under the shelving in the same location. Floors are to be cleaned at a frequency that prevents the build up of food and other debris. Staff was instructed to have cleaned by the end of the shift.

Observed several items in the walk in cooler out of temperature, unit has been in defrost for an hour and the unit has not come out of defrost. See temperature log for patties 50F, Ham Sliced 50F, milk 50F and chocolate milk 51F. Observed temperature logs missing may 16 at night and may 17 in the morning temperature readings.

Corrective action: Spoke with PIC, discarded any tcs foods and expressed that if the unit is going into defrost mode to remove the items from the unit until the unit comes back to proper temperatures. Had a conversation with technician, the unit goes into defrost cycle in the morning at intervals. He mentioned he would adjust the defrost cycle.
