Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed expired milk dated for 02/19/2026 in the RIC in the main kitchen. A date marking system that meets the criteria stated in paragraphs 1 and 2 of this subsection may include:(iii) Marking the date or day the original container is opened in a food service establishment, with a procedure to discard the food on or before the last date or day by which the food must be consumed on the premises, sold, or discarded;

Regulation: 511-6-1.04(4)(h) - ice used as exterior coolant, prohibited as an ingredient (p)
Observed a container of chili in the ice making machine being for cold holding. (h) Ice Used as Exterior Coolant, Prohibited as Ingredient. Ice may not be used as food after it has been used as a medium for cooling the exterior surfaces of food such as melons or fish, packaged foods such as canned beverages, or cooling coils and tubes of equipment. PIC removed the container from the ice.
