Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit.Fully cooked mini sausages at time of inspection were stored on prep table @ 66F-70F, there was not preparation at time of inspection of mini pretzel dogs. per PIC this is done every 30 minutes. Discussed holding product by time ( 4hrs), start prep from frozen or return container to reach in after preparation that is made as demand of product.COS:PIC voluntarily discard product.
