18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed small live flies in kitchen/bar area. The presence of pests shall be controlled to minimize their presence on the premises by:
- Routinely inspecting incoming shipments of food and supplies.
- Routinely inspecting the premises for evidence of pests.
- Using methods, if pests are found, such as trapping devices or other means of pest control.
- Eliminating harborage conditions.
This was also noted in last service from pest control. Keep working with Pest control company, may need to do more frequent services.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(a) - materials, general requirements (p, c)
Observed cloth used as a food-contact surface ( basting brush) at grill station .Utensils and food-contact surfaces of equipment shall be made of materials that do not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions, and shall be: safe, durable, corrosion-resistant, and nonabsorbent. COS: PIC discarded cloth and provided basting brush and spray bottle with oil.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(o),(p) - using drain plugs; maintaining refuse areas (c)
Accumulation of food debris/oil on top of grease storage and around outdoor walls in dumpster area. The area needs a thorough cleaning to prevent this accumulation that can be an attraction for insects/rodents.
