6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
5 bags of Breaded cooked chicken in walk-in-cooler with inconsistent date marking ( 8/9 days). Refrigerated ready-to-eat, time/temperature control for safety foods to be held in the establishment more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed or discarded not to exceed a maximum of 7 days. The day of preparation shall be counted as day One and add 6 more days to get 7 day use by or discard date. COS: person-in-charge had staff re-labeled the breaded cooked chicken ( 7 days) and discussed/retrain with food employees.
No consistant date marking procedure.
