Repeat Violation: Observed expired TCS (Temperature Controlled for Safety) foods: Whole Milk (04/22/25, 05/19/25) Sour Cream (04/24/25), and Buttermilk (05/30/25). PIC/CFSM discarded all items. Discussed with staff. Violation corrected.

Repeat Violation: Observed TCS (Temperature Controlled for Safety) foods that has expired past the 7 days according to the date markings on the package: cooked chicken breast (10/24/24) and raw ground beef (10/30/24). Observed TCS ready to eat beef hotdogs held over 24 hours and not date marked. COS: PIC/CFSM discarded the chicken and raw ground been and date marked the hotdogs.

Observed soiled nonfood contact surfaces of food storage containers, shelves, inside coolers, etc. Will have items cleaned within three to four days.

Observed soiled food contact surface of Beswood meat slicer on prep table of back kitchen. Observed food debris still stuck on the meat slicer blade. Food contact surface. CFSM will have it cleaned today.

Observed TCS (Temperature Controlled for Safety) foods held over 24 hours and not date marked/labeled. Any TCS foods held over 24 hours must be date marked. Pimento cheese made on 05/14/24. Facility does not know when whole milk was opened. Cut/Sliced lettuce has no date. COS: CFSM date marked all TCS foods held over 24 hours.
