4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed food-contact surfaces of the knife holder and stored knives unclean to sight and touch. Observed encrusted food debris and buildup on the can opener blade and holder.
Violation: Equipment food-contact surfaces and utensils are not maintained clean to sight and touch as required.
Corrective Action: Person in charge instructed employees to immediately clean and sanitize the knife holder, knives, can opener blade, and holder to remove all food debris and buildup. Maintain food-contact surfaces and utensils in a clean and sanitary condition at all times
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observation Observed clean plates stored next to the hand sink in the cook line area with food-contact surfaces not inverted or otherwise protected from contamination. Plates were exposed to splash and contamination from handwashing activities, and items were stacked directly on the food-contact surfaces of the plates.
Violation Clean equipment and utensils were not stored in a manner that protects food-contact surfaces from contamination.
Corrective Action Store clean plates inverted or otherwise protected from contamination and relocate items away from the hand sink splash zone. Do not stack items directly on food-contact surfaces. Ensure all clean equipment and utensils are stored in a clean, dry location that prevents contamination.
Person in charge instructed employees to properly store clean plates inverted and away from handwashing areas to prevent contamination. Employees were educated on proper storage practices for clean equipment and utensils, including avoiding direct contact with food-contact surfaces during stacking and storage.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed visible daylight around the ceiling and exterior entry door in the dry storage garage area, indicating gaps/openings to the outside of the building.
Violation: Outer openings of the food service establishment are not adequately protected against the entry of insects and rodents. Holes and gaps along walls, ceilings, and around doors must be properly sealed, and exterior doors must be solid, self-closing, and tight-fitting. Openings may also be protected by approved methods such as properly installed screens, air curtains, or other effective means to prevent pest entry.
Corrective Action: Seal all gaps and openings around the ceiling and exterior entry door in the dry storage area to prevent the entry of insects and rodents. Repair or replace the exterior door as needed to ensure it is tight-fitting and self-closing. I
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observation Observed scoop handle stored directly in contact with flour inside a bulk food container.
Violation During pauses in food preparation or dispensing, in-use food dispensing utensils must be stored with handles above the top of the food and container to prevent contamination. Scoop handle was observed in direct contact with food product.
Corrective Action Person in charge removed the scoop and stored it with the handle extended above the food product and container or store the utensil in another approved sanitary manner. Maintain proper storage of in-use utensils to prevent contamination of food products.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Observed aluminum foil being used as a liner under grills, stove, waffle maker area
Nonfood-contact surfaces that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Materials shall be resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition.
Remove foil from under grill and other areas and replace with corrosion-resistant, nonabsorbent, and smooth material
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observation: Employee beverages were observed stored in the main kitchen area. No designated area for employees to eat or drink was identified.
CA: Designated areas for employees to eat, drink, or use tobacco products and electronic devices must be located in a manner that protects food, equipment, linens, and single-service/single-use articles from contamination.
COS: The water bottles were discarded or relocated, and the person in charge was advised to ensure a designated area is established and used for employee food and beverage consumption.
