6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple cold-held, TCS food items (see temperature log) held above 41F in prep-top cooler.
CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below.
COS: PIC discarded all TCS foods, placed replacements and other items on ice within cooler. No TCS foods should be held in prep-top cooler until repair. Repair person was confirmed on their way. Send proof of repair to inspector by 1/9/26
6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed hot-held soups and sauces holding below 135F. See temperature log. Foods had been held for less than 1 hour according to PIC.
CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at or 135°F (57°C) or above.
COS: PIC reheated foods on grill
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed no sanitizer coming through dish machine after multiple attempts. PIC stated that a part for the machine is on order
CA: A chlorine solution shall have a concentration between 50-99ppm
PIC sanitizing dishes in sanitizer compartment of 3-compartment sink after they run in dish machine until part arrives and repair is made.
Correct by 1/20/26, send proof of machine repair to inspector.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed cooked vegetables, chili and sauce in walk-in cooler date marked as prepared more than 7 days ago (oldest labeled as 12/24).
CA: A food that requires datemarking shall be discarded if it: (i) Exceeds 7 days, not including the time that the product is frozen; P (ii) Is in a container or package that does not bear a date or day; P or (iii) Is inappropriately marked with a date or day that exceeds 7 days .
COS: PIC discarded out of date foods
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(r) - food storage, prohibited areas (c)
Observed foods stored under catch buckets for dripping water from condenser in walk-in cooler.
CA: Food may not be stored under leaking water lines, including leaking automatic fire sprinkler heads, or under lines on which water has condensed
Correction: Repair condenser unit and install protective shelves and covering to prevent contact between drips and food Correct by 1/20/26, send proof of correction to inspector.
