Observed bin of lettuce tightly sealed inside walk in cooler. PIC stated lettuce was prepped two hours prior, temperature was observed at 63 degrees Fahrenheit.
COS operator separated lettuce into two smaller bins and added ice to rapidly cool lettuce.
13A - posted: permit/inspection/choking poster/handwashing
Regulation: 511-6-1.02(1)(d) - displaying of the inspection report (c)
Upon arrival, inspection view was blocked by single service containers. COS operator moved containers.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed handle of scoop, used for bulk sugar, directly touching contents. COS scoop was removed.
