Food handlers while handling dough observed wearing watches CA: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: watches removed upon request
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observation: Gasket(s) on the pizza line left and right prep cooler are torn. Discussed with the PIC to replace/repair any torn gaskets. CA: 1. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule.
- Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observation: Quat test strips were unable to be located during the inspection. CA: Sanitizing Solutions, Testing Devices. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Discussed with PIC to purchase/obtain Quat strips within 72 hours and to email photo of strips.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observation: shelves in the walk in cooler, the interior bottom of the Frigidaire freezer, gasket on the 3 door Duker cooler, Arctic Air gaskets are unclean food build-up.
