Observed several clear plastic pans and lids with broken portions of the equipment. CA:
- Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. Discussed with PIC to replace
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Wall of the outdoor walk-in cooler door has some black spotted build-up. CA: floors, walls and ceiling shall be clean to sight and touch. Recommend removing the plastic, cleaning the wall area and replacing the paper if required.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee coffee cups stored with school items in the Continental freezer. CA personal items shall be stored separate from all food service items COS: items relocated to the bottom shelf where no other food service items were located.
