6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed cold-holding temperatures above 41F of TCS foods in right-most prep top cooler behind grill area. PIC and staff noted that foods had been placed in cooler prior to arrival of inspector (approx 11 am). Inspector checked again after 1 hour and foods were still above 41F with no sign of lowered temperatures.
CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above.
COS: PIC discarded all TCS foods (cooked sausage and cut melons).
