Observed cooked rice set to cool inside reach in cooler in a tightly covered plastic container. Rice was cooked approximately an hour and a half before start of inspection. COS rice was moved to reach in freezer for rapid cooling. CA. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be:
(i) Arranged in the equipment to provide maximum heat transfer through the container walls; and
(ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.

Observed TCS foods (cooked chicken and milk) inside whirlpool reach in cooler well above 41F. Advised to move to employee refrigerator for rapid cooling and place employee items at bottom shelf. COS TCS foods were moved.
