Observed high temperature mechanical ware washing machine not reaching the minimum required temperature of 165 degrees Fahrenheit. PIC ran the machine several times but dishwasher machine was not able to reach the temperature of 165 degrees Fahrenheit.
CA: For a stationary rack, single temperature machine final rinse temperature must reach at least 165ºF (74ºC)
PIC set up the 3 compartment sink to use until the washing machine is working properly.
Regulation: 511-6-1.05(3)(j) - sink for washing raw fruit and vegetables (p)
Observed no vegetable or fruit sink available at the facility.
CA: At least one sink, plumbed with hot and cold water under pressure, shall be provided for the washing of fruits and vegetables as specified under DPH Rule 511-6-1-.04(4)(g)1.
Discussed with PIC to have the produce sink installed as soon as possible. Once the work order is submitted provide proof via email.

Observed a container with prepared gravy being cooled in an ice bath. PIC stated that they started the cooling process at 10:00 am. Observed at around 2:00pm (4 hours later) the temperature measured at 107 degrees Fahrenheit.
CA: Cooked time/temperature control for safety food shall be cooled within 2 hours from 135°F (57°C) to 70°F (21°C) then cooled within 4 hours to 41°F (5°C).
COS: PIC voluntarily discarded the gravy.
