Observed food service employee pick cooking utensil off of floor and proceed to grab a stack of clean dishes without washing hands.

COS: Instructed food service employee to wash hands and take stack of dishes that were contaminated to the dish machine to be rewashed.

Observed five dishes in the main kitchen stored as clean with food debris present on the interior surfaces of the plates.

COS:Food service employees moved unclean dishes to dish machine area to be rewashed.
12C - wiping cloths: properly used and stored

Observed four wet wiping cloths stored on countertops throughout the main kitchen that were not in use and not stored in a sanitizer solution.

- Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be: (i) Maintained dry; and (ii) Used for no other purpose.
- Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n);
PIC made a sanitizer bucket and placed each wet wiping cloth inside bucket.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed a black organic substance on the interior vents of a reach-in cooler, as well as on the upper portion of the door around the gasket seal. Also observed multiple wine glasses stored rim side down in contact with rusted grates.
Nonfood-Contact Surfaces (C) (d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
Discussed with PIC to have reach in cooler deep cleaned or replaced and to remove wine glasses to be rewashed and stored in another clean location.
