6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several food items,( raw chicken, pans of beef slices, cheese slices, and eggs), being cold held at temperatures above 41 F. Advised pic that TCS foods must be cold held at 41 F and below. COS. Food items were put on ice bath and returned to 41 F and below.
2-2A - management knowledge, responsibilities, reporting

Pic could not provide employee reporting agreements for herself and new employees. Advised pic to provide documentation for all employees.

Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed the hand sink being blocked by drink containers. Advised pic to move drinks. Drinks were relocated to another part of the kitchen.

Observed hand washing sink without any soap. Advised pic to provide soap for hand washing. COS. Liquid soap was provided.

Observed food contact surfaces with food debris. This area was cleaned with a cloth that did not contain sanitizer. Advised pic to properly clean and sanitizer food contact surfaces.

Observed flour being stored in a bin that was not labeled. Advised pic to label container for food items that are removed from original container.
11C - approved thawing methods used

Observed frozen tripe being thawed on the counter. Advised pic to thaw food under running water or inside of a cooler.

Observed pic wearing bracelets and large rings while preparing foods. Advised pic to remove jewelry.
12C - wiping cloths: properly used and stored

Observed soiled wiping cloths on counter. Advised pic to place used cloths within sanitizer bucket with sanitizer. COS. Cloths were placed in sanitizer buckets.
