CA: Food shall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. Observed food containers of jalapenos, shredded cheese, and marinated tomatoes in the prep top cooler and food containers of potato fries and breaded mozzarella sticks in the reach-in freezer, all without any coverings or lids. COS: Food employee provided each food container in all equipment with coverings.

CA: Equipment shall be maintained in a state of good repair and good condition. Observed buildup of food debris and splatter on the exterior of prep top coolers, reach-in coolers, and dish machine.

Observed ice machine with pink and black soil build up. Informed the Person In Charge (PIC) to clean the ice machine. CA: Equipment food-contact surfaces and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil or mold.

Upon testing the quat sanitizer in the 3 compartment sink, PIC reported no test strips to test quat. CA:A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided
